Rename o.e.a.explorer.activity in o.e.a.explorer.activity.ui

This plugin rely heavily on the UI, notably eclipse.ui (view, navigator)
gmf, or even plug-ins from the Sirius UI.

A .ui name makes this obvious and more consistent with o.e.a.discovery.*

Furthermore this opens the name o.e.a.explorer.activity for non ui logic
if we want to introduce such plugin later on.
